I would like to fit a split charging system to my 1981 Range Rover so that I can ran a 12 volt fridge without fear of running down the main battery, but I don’t really know what is required.

Using a split charge diode will stop your fridge draining the starter battery. Some of the more expensive cool boxes and fridges do have safety cut-outs that switch the cool box/fridge off when it detects its power source has dropped to a certain limit. I have come across some that are so finely set, that they wouldn't run, unless the alternator was generating power.
